These 3 easy toddler breakfast ideas, along with my Coconut Oat Waffles, are in heavy rotation at the Diehl house. All three are easy, protein-rich and toddler approved.

Easy & Healthy French Toast

  • 2 slices multigrain bread
  • 1 egg
  • 1/4 cup milk (I use whole milk but milk substitutes would work as well)
  • 2 tsp cinnamon or pumpkin pie spice
  • dash of vanilla
  • 1 tsp maple syrup
  • 1 tbsp butter/coconut oil/extra-virgin olive oil
  1. Combine all ingredients (except for bread) in a bowl.
  2. Dip both slices of bread in egg mixture, coating both sides.
  3. Heat ~1 tbsp butter/coconut oil/extra-virgin olive oil in a pan on the stove.
  4. Cook french toast on the pan, flipping to ensure both sides crispy and instead cooked through.
  5. Serve with greek yogurt & fruit or scrambled eggs.

**Luca will eat 1 piece of french toast per breakfast so two slices is enough for two toddlers or two days.

Easy Egg Frittata

  • 4 eggs
  • 1/4 cup milk (again I use whole milk but milk substitutes would work as well)
  • additions: cooked breakfast sausage or bacon (we use nitrate/nitrite free!), red pepper, tomato, spinach
  • salt & pepper
  • butter or olive oil for sauteing
  1. Preheat oven to 350.
  2. Melt butter or heat olive oil on in pan on stove.
  3. Add additions until heated.
  4. Scramble eggs and milk and add to pan.
  5. Use a spatula to move eggs and additions around in the pan for a couple of minutes.
  6. Make sure bottom of the pan is covered with egg mixture and put pan in the oven.
  7. Bake for ~5-10 minutes until eggs cooked through (when you pick up the pan the eggs won’t move anymore)
  8. Cut and serve with multigrain toast & fruit.

*Alternative cooking method: You could cook the whole thing on the stove to eliminate oven use. Instead of putting the pan in the oven, place a lid on the pan and cook the frittata over medium-low heat for 5 minutes.

**Luca eats about 1/4 of the frittata so this meal will last us at least two days.

Fruit, Oat & Yogurt Parfait

  • Plain whole milk Greek yogurt
  • Fruit – we do a lot of berries!
  • Organic rolled oats

Add yogurt, fruit and oats in a bowl. Mix until fully incorporated. This one is pretty self-explanatory but you could substitute granola for oats and play around with the kinds of fruit you add. We also love mixing in a little natural peanut butter!

*Can also use canned fruit if you’re having trouble accessing fresh produce right now. We’ve tried canned pineapple (in pineapple juice) and Luca really enjoyed it.

Some other breakfasts we love are avocado toast triangles & scrambled eggs, traditional pancakes, toast with ricotta & cinnamon and fruit and oatmeal mixed with peanut butter & banana.
