I love cooking and baking. Being in the kitchen working on a recipe soothes me and feeding others truly brings me so much joy. And at a time where anxiety is high, I’m using my kitchen as an outlet for stress and fear. These coconut oat waffles are easy, healthy and delicious so they’ve been on heavy rotation the past couple of days.

I talk about my new waffle maker in a January Five Favorites Friday post and a month and half later I’m still obsessed with it. We have the Krups Belgian Waffle Maker — it’s a great size with 4 waffles squares, the plates come off so it’s easy to clean (& dishwasher safe!) and it has 5 browning levels to bake your waffles according to your preferred crisp level. Given how easy it is to use and clean and how much Luca and I love waffles, I make them multiple times a week.

I’ve been experimenting with different flavors and ingredients to come up with a healthy and delicious waffle option. These Coconut Oat Waffles are a product of my experiment with different flours and grains to change the texture while still maintaining a high “fluff” level. The waffles are made with coconut and stone ground white wheat flour (King Arthur is my favorite), organic rolled oats and sweetened with maple syrup. We usually top them with fresh fruit and Greek yogurt or more maple syrup and butter.

I typically make a double batch and freeze half. I store them in my reusable storage bags and take out what I need when we want waffles. I’ve found the best way for reheating the waffles is to microwave on half power for 1 minute then toast then in the toaster to crisp the outside.

Coconut Oat Waffles

A fluffy waffle made with coconut flour, white wheat flour, organic rolled oats and sweetened with maple syrup!

Ingredients

  • ¾ cup white whole wheat flour can sub all purpose or whole wheat
  • ¼ cup coconut flour
  • 2 tbsp organic rolled oats
  • 1 tsp baking powder
  • ¼ tsp kosher salt
  • 1 tsp pumpkin pie spice or cinnamon this is totally optional!
  • 2 tbsp melted butter can sub liquid coconut oil or EVOO
  • 1 egg
  • 1 tsp vanilla
  • ¾ cup whole milk I usually use between 3/4 & 1 cup milk to get the consistency I'm looking for

Instructions

  • Turn on waffle maker.
  • Combine both flours, oats, baking powder & salt in a bowl.
  • Melt butter in microwave (or on stove if preferred).
  • In another bowl scramble egg, add milk, melted butter & vanilla.
  • Add wet ingredients to dry ingredient bowl, mix until combined — if batter is too thick add more milk until you reach desired consistency.
  • Pour batter onto heated waffle maker plates. I usually pour the batter in the middle and spread it a bit with a spatula then let the top plates move the batter a bit more when I close it.
  • Cook according waffle maker instructions and desired crisp level.
  • Remove from waffle maker and top with whatever toppings you like!
