Homemade Pumpkin Spice Latte

A PUMPKIN PREGNANCY CRAVING

Happy Monday y’all! What better way to start off a week than with a homemade pumpkin spice latte?! I shared in my Pumpkin Muffins with Cinnamon Cream Cheese post on Friday that I was ALL IN on the pumpkin flavored foods and beverages train. It’s probably a pregnancy craving but I’m taking complete advantage and making all the pumpkin things.

PSLs AT HOME

Next up on the list — this homemade pumpkin spice latte! I’ve always been a huge fan of Starbucks’ PSLs but that habit can get expensive real quick. I knew I had come up with my own recipe to make at home. I was already making a latte every morning (I didn’t drink coffee for most of 2020 — I started a couple of months ago because #pregnantwithatoddler BUT I am decidedly very extra when it comes to my morning Joe). So I figured I would build off of that recipe! I began by adding a little bit of organic pumpkin puree (this is my favorite) to my espresso/small coffee. Then i added my normal brown sugar and frothed half & half.

It took me a whole week before I got the ratio of pumpkin and sugar to my liking. Now I am HOOKED. It’s the perfect amount of sweet to pumpkin and warms you from the inside out.

BE YOUR OWN BARISTA

You’ll want to start with a strong coffee base. I’ll usually do one Nespresso pod or 4 oz of drip coffee (we make it pretty strong). Next add the pumpkin puree — it’s super important to use actual pumpkin puree (organic if you can find it!) and not pumpkin pie filling. Then add your sweetener and top the coffee with some frothed organic half and half (try it — seriously so much creamier than milk!), mix then sprinkle on some cinnamon!

You’ll be amazed that a drink you made at home tastes like it was made at a coffee shop! Once I perfected it, I joked to my family that I should get a part-time job at Starbucks. I definitely would not last a single day but a girl can dream.

Ingredients

  • 1 Nespresso pod or small cup of coffee
  • 2 tbsp organic pumpkin puree
  • ½-1 tbsp dark brown sugar I've tried coconut sugar & cane sugar and both work but I think brown sugar pairs really nicely with the pumpkin
  • ¼ cup warmed & frothed half & half, cream or milk I found that I prefer the creaminess of half & half over milk but milk would still taste delicious! I have not tried it with alternative milks but my SIL used almond and said it was good
  • shake of cinnamon or pumpkin pie spice

Instructions

  • Add pumpkin puree and sugar to the coffee and mix very well.
  • Heat & froth your half & half or milk.
  • Pour half & half / milk over coffee mixture. Stir gently to incorporate but not too hard so you don't lose your foam.
  • Sprinkle cinnamon or pumpkin pie spice on the top. Stir gently. Enjoy!
